This Hikari Koji Miso paste is all about getting a local flavour straight from Nagano. By using locally grown soybeans, grown and fermented right at the base of the Kiso Mountains, as well as domestic rice and sun-dried salt, they have produced naturally full-bodied and textured miso that can complete any meal without any need for additives.
